Singaporeans love Japanese food, and everyone is constantly on a lookout for a new and nice Japanese restaurant to dine. But, when it comes to cooking and preparing for Japanese food at home, the next challenge will be finding halal Mirin replacement, or finding a halal Teriyaki sauce. And when you managed to find a halal Mirin or Teriyaki sauce, it is often expensive.
Today's recipe will be featuring how you can make your own Teriyaki sauce at home, and store them for your own consumption. Note, you do not need to source for halal Mirin as we do not use that in this recipe.
Teriyaki Sauce

INGREDIENTS:
120 g Soy Sauce
50 g Sugar
1 tsp Salt
METHOD:
- In a pot, combine all the ingredients and bring to a boil.
- Let it boil for about 2-3 minutes till slightly thicken (or to your desired consistency).
- Cool down and use immediately. Store in refrigerator for up to 2 - 3 weeks.
Teriyaki sauce is really easy to make, and goes well with pan-fried items such as chicken and salmon. Here is how you can make use of your Teriyaki sauce to make a Teriyaki Salmon.

Teriyaki Salmon
Prep 5 mins | Cook 7 mins
INGREDIENTS:
2 nos Salmon Fillets, skin-on (roughly 180-200g per fillet)
AN Salt
AN Pepper
1/2 tbsp Oil
4 tbsp Teriyaki Sauce
METHOD:
- Make sure that the salmon fillets are dry otherwise, pat dry with kitchen towel.
- Season both sides of the salmon fillets with salt and pepper.
- Heat oil in a frying pan (or skillet) over medium to medium high heat.
- Add the salmon fillet (skin side down) and press down to make sure that the fillets doesn't curl up. (Make sure that the pan is hot before adding the salmon filets.)
- Cook for two minutes and turn the salmon over and cook for another two minutes.
- Add the teriyaki sauce and let the sauce bubble. Use a spoon and spoon the sauce over the salmon fillets.
- Once the sauce has thicken slightly, turn off the heat and transfer the salmon onto a serving plate and glaze the remaining teriyaki sauce over the fish.
